Fusion Bibimbap

I had been wanting to try cooking bibimbap for some time now, but never got to buy the most essential ingredient - Gochujang (spicy chili paste)! After a visit at our neighbourhood grocer, I finally got hold of the gochujang, hence I can proceed with this dish. I did not use all Korean ingredients, hence it's called 'Fusion Bibimnbap'.

Ingredients

Meat and Marinate
200 thinly sliced beef
2 tablespoons soy sauce
3 tablespoons sesame oil
2 teaspoons sugar

Vegetables
One bunch of fresh spinach, washed and chopped
One cucumber, halved and julienned
One carrot, julienned
100g bean sprouts
5g dried shrimp or 'ha mai'
One egg
Dried seaweed ( I bought the ready made packets from the Korean mart)
sesame oil
toasted sesame seeds
clove of minced garlic
salt and white pepper to taste
spring onion for garnishing

Sauce
4 Tbsp Gochujang (Korean chili paste)
1 Tbsp honey
2 Tbsp warm water

1. Beef: Mix the soy sauce, sesame oil and sugar, and marinate the beef for at least an hour in the fridge.

2. Spinach: Blanch spinach in boiling water for 30 seconds. Remove promptly, rinse with cold water and drain. I used my hands to squeeze out the water from the spinach to ensure it's properly drained.

Place the spinach in a dish with 1/4 teaspoon salt, a pinch of minced garlic, 1/2 teaspoon sesame oil and 1/2 teaspoon sesame seeds. Mix well and set aside.

3 . Bean sprouts: Blanch bean sprouts for 20 seconds. Drain, place in a dish and add 1/2 teaspoon sesame oil with a dash of salt and pepper. Mix and set aside.

4. Cucumber and carrot: heat up wok or frying pan with 2 tbsp cooking oil. Fry dried shrimps till fragrant. Add in sliced carrot and cucumber and fry for 5 more minutes till cooked. Set aside.


5. Egg: Fry one egg sunny side up. If you don't like the yolk to be runny, just fry the egg till fully cooked.

6. Sauce : Mix gochujang, honey and water well in a small bowl.

7. Cook enough rice for two. Serve the cooked rice in two bowls. Top with marinated beef, vegetables, seaweed and egg.

8. Top with sauce and spring onions as garnesh.

9. Break the egg yolk, mix with chili sauce and all the ingredients together, and enjoy your bibimbap!


p.s. - this is served in a bowl, not a plate :p

I think I would try this dish out more often as I can be flexible with the ingredients. Perhaps some grilled chicken, raw lettuce, acar and picked cucumber sounds good too!
