Rose-flavoured Dragon Fruit Jelly

After my last jelly misadventure, I decided to try out another recipe, this time it is dragon fruit jelly loosely based on this wonderful posting from Table for 2 or more. However, I decided to add in rose essence instead of just sugar or honey.

Ingredients
20gm agar-agar strips
850ml water
2oogm caster sugar
1 dragon fruit (medium)
1 - 2 tsp rose essence

1) Soak agar-agar strips till soft.

2) Boil the agar-agar strips in 850ml water till fully dissolve.

3) Add in caster sugar into boiling mixture and stir till dissolve, simmer for 3 - 5 minutes.

4) While waiting, scoop the flesh from the dragon fruit and mesh it using a fork till it becomes a smooth puree. To ensure I get a smooth texture, I first mesh the fruit in a bowl then proceed with meshing it again over a strainer. I can also separate the juice and the seeds from this method.

5) Turn off heat, add in 1 - 2 tsp rose essence into mixture.

6) Add in the dragon fruit juice and seeds into mixture and stir quickly.

7) Pour mixture into jelly molds.

8) Allow it to set, then put into fridge to chill.

Overall, I am much happier with my 2nd attempt. The jelly is now harder due to less water content, plus I love the pink colour and seeds in the jelly, knowing the the colouring is 100% natural :)

Although hubby didn't quite like the seeds, I can separate them out next time. This will be something I will definitely be trying out more often, yummy!
