Looking back at my post, can't believe it has been four years since my first attempt to cook vegetable curry! It must have been a very traumatic experience that time, hehehe...
Anyway, I tried cooking this dish again, making sure I do not make the same mistakes 4 years ago.
This is the outcome :
Hubby noted that there's enough flavour and santan in the curry, but lamented it's too dry! Perhaps I did put too little water but I suspect it was the tofu puffs which absorbed all the curry.
It's a good start, I think I will try to cook this dish again, hopefully with even better results :)
